I've been on a bit of a mission myself Scotty, gone in 2 holes on the belt and need to poke a new one. Started with goals to run 5k under 25 mins, something I tried for 3 months last year to do. Last 2 runs down to 24 mins, 1 month ago was at 28 mins.
There's 2 ways to do this and I've done both: Go full ketosis based diet with low intensity exercise. Or go healthy paleo type with lots of salad, fruit, veges and lean meats and train your ass off. Option 2 is slower but you feel way better and get stronger quickly.
