Near Augsburg is the Mandichosee which has a Wing scene, Ralph from the shop Freestyleworld rides usually there and may have some used boards to sell.
The route you're proposing for your travel deliver good windsurfing conditions only randomly, so you're better of winging.
Lake Garda should be the most consistend spot to visit, if you have the time consider driving down to Vieste, Gargano, also a good wing spot but crowded with germans the two weeks after Pentecost.

I had the 22' Banzai 5.5 but never really liked it, it felt heavy, wobbly, unstable and poor to control in gusty winds (on the 400 100 mast), it only felt ok when trimmed flat, but then my 5.0 delivered the same power with much better handling and control. So i changed to a 24' Banzai Max 5.5 which felt much better and more stable.
I wonder how the new Banzai 12 5.6 would compare to the Max 5.5 or Banazi 22'/24' 5.5 in terms of stability with all these design changes.

As Nicko said, Polakow never rode JP/Gnigler boards, always Quatro customs. As Keith mentioned in the video "... we're working together since 20 years...".

I have the 2019 Quatro Glide 8'6, the more pointed nose shape.
For my 94 kg the 130 litres are enough for my stability even in slight chop. In stronger chop where i start to fall, the waves usually loose their quality anyway, at least at the spots where i wavesup.

I had the 106 Hypernut and it wasn't great. Are you looking for a board that rides like a big windsurfing board or like a SUP with a sail?

I had the 10' RRD Wassup and tried a few other boards for sup and windsup.
The RRD was nice for windsup but really stiff for sup turns on waves. OTOH ohter SUPs with more surf oriented shapes/rockers and classic outlines need the stance you descibe when planing on a wave. Pure sailpowered planing felt terrible because they bog around climbing on their tailrocker, braking, re-accerlerating back on the tailrocker and so on.
Best compromisse i found are flat rockered Stubby shapes like your Hypernut was. I had a F-One Papenoo 7'11 which was ok in both applications sup and windsup, but after all a compromise in both worlds.
Now i have a Quatro Glide 8'6 which is more stable and surfs far better, than the former boards.
No more windsup for me though, since winging covers the lightwind days now.

I ride a custom board for winging with all the described parawing attributes, a 6'1 x 22, 95 liters being 94 kg.
IMO these "para" boards also work perfectly for winging, esp. if you like to ride smaller wingsizes that you have to pump on foil rather than getting pulled on foil by wing power.
Combine that smaller wing preference with gusty, light and/or choppy conditions and you highly appreciate the 22" width and the stabillity the recessed deck is giving.

80 Liters should work for your 76 kg, but for sure 90 liters would be easier.
I think your choice depends on what you want to do your board in higher winds.
I'd highly recommend a midlength board that is not to narrow, rather wider and thiner, which affects stability.

My wingboard journey coming from bigger boards for learing for my 94 kg was at first a 87 liter 5'1 x 24 board which was a nogo in light winds, so decided to get a 114 liter 6'8 x 23 lightwind board, This 6'8 midlength board was a nobrainer in lightwind an still ok in higher winds, but you can feel the length ansd volume. I then decided to sell my small 5'1 board an get an midlength 85 liter 5'8 x 22 which was far easier for taking off, but in in light winds and/or choppy water it still was hard to balance on. But it was so much more agile than my 6'8 that i wanted to ride a small board more often, even in lighter winds. I then finally got a 95 liter (=bodyweight) 6'1 x 22 which fits my needs now perfectly. The 85 liter 5'8 is on sale now and i guess the 6'8 will be soon.
All boards a german made custom made XPS/carbon boards with modern, rockeroriented and touchdownoptimized shapes, the 85 compareable to the Omen Flux V2, my new 95 liter comparable to a Axis Mini Dart (less bevel, more tailrocker).

On the Quatro HP they anounce a new Kay Lenny Edition model called Midlength which is specced as an Twinfin.
I own a 2019 Quatro Glide 8'6 x 32, 130 liters, which i recently also converted into a Twinfin using Future K1 Keels and boy this feels like rocket fuel on in the board. While my 3 week trip to Portugal i could compare the Keels back to back to the original Thruster and also to a MFC Quad setup and found the Twin setup really spiced up the board regarding speed an turning.

There's not much to read about Quatro SUPs here (and elsewhere) but now i wonder if stepping up to the new Kai Lenny Midlength would be a logical step up in my SUP evolution, thinking about the 140 liter model 8'8 x 31.
Has anybody seen these boards in real life or other infos than the stuff on the Quatro HP?
