I have the 925 and 725. At 75kg riding a 69l board in salt water, I'm on the 725 any day that is 15knots or over. At 25+ knots, there is no question in my mind that the 725 would be the one regardless of fresh or salt water.
The 925 is much easier to ride, but after three sessions I'm getting more comfortable and confident on the 725. With the conditions you're describing you will really enjoy the 725. It's wicked fast, has great glide, and turns fantastic on swell and waves. In 20+ knots yesterday, I was comfortably keeping up with windsurfers.
Wow, sounds like the 725 is the next wing coming then!

I thought the 925 was already high performance for me, coming off the 1550v2 and the 1250, but I find it quite remarkable how quickly you learn and progress through these wings. I'm 10 sessions in or so on the 925 and feel very comfortable on it, able to get going in the lightest of winds. Can't think of any conditions I'd want to be back on the 1550v2 or 1250. Now the 725 seems well within my capabilities. A month or 2 ago I'd never thought I'd be riding <1000cm2 foils, let alone a 725 one, but I'd love to try it now!
