Why not go and talk to a shaper about it. An 8 footer would probably be the go.

A low rockered single fin paddles really well, and there's nothing to confuse you with the fin set ups. It's a single fin !

You'd also have plenty of fun on a 7'6 single fin from someone like Greg Brown. With tints of course! Maybe throw in some side biters. But keep your side fins nice and small at first.
