I was looking for a way to make this even harder on my hands

Kind of like the innovation of the guy at the back with what looks like (in the photo above) an open top bucket hat so there's more room for the hair!

I suspect they're just showing off how stable their wings are ... and having a bit of fun.

I was thinking of saying that it might be fun to have the wing up and out of the way while riding semi-powered on a wave, but the rear guy's wing is flopping around a bit and that would be a pain.

Maybe needs some sort of bar and lines to tip to add control?

I am sceptical to be honest , the bridal on kites make them stable ,the wings in the video are flying all over the shop .Good thought but not for me .

I think if you would be able to make a wing so stable that you can just let it freefly and hook to your belt and surf with a leash that put that wing overhead, that would be so much fun, like you totally forget your wing and just surf!!! But having the wing above head as they are doing is not a requirement I think...I don't see what is the benefit unless i'm missing something.

Seems like this is a better in between option:

So I do something like this when riding backside, kind of evolved naturally. I'll be backside to the wing, my leash going from the front of the wing to my back hand, touching my front hand. But I'm riding backside and my back arm is all bunched up and uncomfortable so I just grab the leash with my front hand, let go of the front handle, and the few feet of leash out there on the front of the wing let's me extend my back arm to a more comfortable position.

I've messed about holding my wing one handed from the harness line , the wing is not very steady but feels nice having it further away and being able to drop the front arm for the few seconds it behaves it's self .

I've done it holding my harness line. Done while surfing downwind. It gives better vision. Feels slightly more free. Maybe catches more air.
