that's a tough question. i don't know how much you weigh, how big your board is, what fin you got? so i dunno, lightweight guys plane in 10-15 knots on bigger freeride boards and 6.6 sails but us fatties need big boards and bigger sails.
the easy stuff is the bank just south of coochiemudlo island. we sail there from thompsons beach at victoria point. usually, the best wind in a SE or S is Victoria point. but for some unexplainable reason it can be patchy from time to time. as in there could be 15 knots at thompsons and 5 knots at the bank or vice versa. so a bit of local experience helps.

Sounds good. I think high tide is at 1.30pm (1.61m) will that be enough water to sail?

the bank is only good at low tide. say 1.5 hours before or after low. the bank is easiest to get to when the tide is going from low to high cause you don't get the big chop encountered on the way out there. but from high to low the chop is there. great on wave gear but not fun on small speed gear. though the like of vando and pierre seem ok with it.

i've sailed my formula kit all over VP with a 70cm fin, yeah at low tide there is not much water but if i stay to the channels all is good. at hightide, just go anywhere no probs.
