theres' a lot of surfers on the surf side.
not to many people go in the water on the bay side as it is very sharky.
mates that surf there see noahs all the time but it doesn't bother them.
I have had one of the best wave sails of my life at jumpinpin which is the south end of north straddie.
If you don't have a 4wd try the road past the golf club to the ocean beach - you can get right to the beach and its great in a nne - almost cross off.
If you want flat water try amity.
Not sure about se but have heard you can sail frenchmans or the open beach.

I was there recently and stayed on Home Beach and there was a fantastic launch in a NW (rare other than Wello) near Cylinder Beach.
From what I saw on the ocean side there was ample opportunity for a sail off Main beach in a SE or NE breeze.
