Yep, the lakes are difficult - shallow and nutrient rich = plenty of weed growth. I lived and sailed there for years and there are few alternatives to check out.
The western side of the lakes tend to be deeper. Not sure how access is these days, or how these spots have changed in the last 10 -15 years but check out:
End of Marine Parade or March Street, Rocky Point - good spots for S,SE and NE - getting to the water could be difficult, but deep water pretty quick
End of Oakland Street, Wyongah - same as above
End of Howelston Road Gorokan as an alternative to Canton Beach in a southerly
All over that western side of the Lakes are little hidden lanes down to the water and while many spots are rocky and deep, they offer clean sailing. Get out and explore it i reckon!
As mentioned above in another post, Mackensies reserve on Lake Munmorah in a NE, but you need to walk through the weed for a bit to reach deeper water. An alternative to this is the end of Sunrise Avenue, Budgewoi / Halekulani, just where the Mobile Home place is. Used to blast off there in a NE.
There is always off the North Entrance Fish Co-op in a NE - stronger there than enywhere on the lakes, but a hassle to get out to. You need o launch next to coop - limp across the sheltered channel, and walk across weed bed to reach deep water - lots of work, and coming off in the sheltered channel with no wind on a small wave board and fast out going tide is not fun!
If you take the time to dig around there are other spots. Best bet is ocean sailing though. Plenty of it around, from Birdie Beach and Fraser Park in the north, Norah Head in a NE, Hargraves Beach as someone mentioned, North Entrance Beach, all the eway through to Towoon Bay which is beautiful spot to sail in a S or SE. Further south than that others will know better than me.
Pelican is a sensational spot to sail in a NE - flat water, NE stronger there than most places, but a bugger to get to. Used to launch as Soldiers and sail down to Pelican, and then continue down to North Entrance and get picked up. Brilliant stuff on a hot sunny day and a cranking NE...

going to look around woy woy , and Lake Munmorah see what else is around
i am still learning , hopping when i have experience i can just stay at the beach
i love salt water, hot sand, bikini babe - hate the lake for it pelican itch , weed, mud

found Lake Munmorah water quality is worst then tuggereah lake
thinking about trying around the south part of lake Macquarie
