i have had some fogging - typically i dump 30 sec to 1 minute of my car's aircon into the housing - with the camera inside - the idea is to make sure there is as much dry air as possible in there before i seal it up.
some days no probs at all - other days i get fog after about half an hour or so - so its a little bit hit and miss. others have suggested a hair dryer to dry out the air.

If you run the car airconditioner for a few minutes (or any air conditioner for that matter) on the LOWEST fan speed setting and put the camera case in front of it and fill it with the freezing air it will help, for the same reason that the air con stops fogging up on the car windscreen.
The idea of running the fan on the lowest setting is to get the air as cold as possible as it flows over the evaporator. This means it will drop almost all of it's moisture on the evaporator and blows out cold dry air.

When the air warms up again it can now hold far more water vapour than is in the camera case so you don't get fogging up, unless the camera case gets colder than the air was coming out of the air conditioner, in which case it's too cold for windsurfing so go home,

{edit} You can do this any time you like really, it shouldn't matter. Once the case is sealed it's supposed to be water tight. {/edit}
The small Silica gel bags would probably do a better job provided they are in good nik.
