Salmon a la SUP

A SUP Boat of Salmon - the easiest and tastiest salmon you'll have this month !

Preparation - less than 10 minutes, cooked on about 180 for about 45 minutes

1) Get a square of foil
2) Get a similar sized square of baking paper, lightly screw it up under running water, to dampen it, and place it over the foil
3) get a slab of salmon, and whack it on the paper
4) finely grate enough fresh ginger to make a layer about 3mm thick over the fish - see photo 1
5) Chop about 1 challot (or spring onion) per serve, place on top of ginger
6) Add two cap fulls of Soy Sauce (probably around 20-25ml)
7) Lightly bunch up the foil and paper, so it is like a pouch, see photo, and pop it in the oven
8) Serve either in the pouch, or on mashed potatoe, or have beens a shallow fry potato chips as sides...

Yum Yum.

With this miserable weather I've got my chefs hat on and there is nothing I like cooking more than sea food. Our local fishmonger has tons of swimmer crabs at the moment, I should look at doing a good crab dish - any ideas simondo?

Junior master chef is on now and they are doing some amazing things with fish right now.

Oliver, for the swimmer crabs, try a bit garlic and oil and butter, with a hint of chilli salt and pepper. Cut the crabs in half down the middle, and cook them hot and short on a clean BBQ or frypan or wok, turning regularly. The legs might be BBQ crunchy too.

Serve with sauce options like soy, quality mayo, and garlic slivers.

If you ever get to Sydney, book your accomm at Barrenjoey House and eat in the restaurant and order their seafood platter. Delightful!! They do a dinner and bed deal too.

I regularly make the effort to get up there. It costs the same as staying in the city but you get a 5 star feed to go with it!

Google some ideas too.
