Hey so I am looking at getting a SUP and was wondering if there is much of a difference between an inflatable board and just the board. As a beginner I'm not all that interested in the fancy stuff I just want to have some fun and get out on the water...

I believe the inflatables are a poor substitute for the solid boards, particularly in the surf.
They are obviously safer if they hit somebody and I guess you could argue they are handy if you have limited storage area.
BUT, they tend to follow the contours and lumps in the water and conform to the hollow shape of the wave, tending to dig the leading rail near the nose. I find stability to be compromised also, I think because of the flexible nature of the board but also the extra buoyancy.
I do believe that if my first board had been an inflatable I may not be paddling now.
They're probably well placed in the SUP schools and aquatics programs.
Unless you have a real need for an inflatable board i.e. no car, river rapid bashing or some back country explorer need I would go with a tradition board, inflatables are a compromise unless you have a specific need or require something highly portable (for a SUP) that is !

If you can, demo a hard board and demo an equivalent inflatable, and see what you think.
Some of the earlier and/or cheaper inflatable were/are really bad to paddle.
However, I understand that inflatable technology has improved a lot in the last year or two.
So, don't bother with a really cheap or old inflatable. If you can, demo a Red (redpaddleco.com.au/) or otherwise a recent model inflatable from a brand like Starboard, Fanatic etc.
I have been involved in social and competative water sports of all types for over 40 years now. I have owned inflatable SUPs for the past three years. I love them. All of my gear fits in a cricket bag. Keep it in the boot and is ready when I am. I only used it on flattish water. Thats fine by me.
Just make sure that you get one that has enough flotation for you. I weigh about 110-115 kg and now have the Starboard Astro 12'6" x 30". It has enough stability and tracks well.
I SUP for fun and fitness only. Inflatables are fine unless you are an elite sportsman and are out to win every race.
Horses for courses. By all means seek the opinions of others and disregard the opinions of those who do not use an inflatable.
