One man did this incredible job the first link is the run down the second is the finished article, he now lives aboard with his wife and children they live in New Zealand and sail this true racer cruiser to the islands each year.
This is great. The guy clearly has some amazing skills to be able to do that. I also like how it is summed up in a short video.
My only thought though is that it looks nothing like the original boat which I find a little sad. They could have started with any hull or it could be a new build. There is a video about that other Whitbread yacht in Holland (I think) which is still a racing boat and more like the original which really appeals to me.

Why is it so hard for people to build a hard dodger that doesnt spoil an otherwise beautiful boat.
There was a story in one of the mags years ago about an older couple who had a big bitch 60 to 80 footer built in aluminium and then just fitted out to accommodate the two of them. The rest was an empty shell.
They took it sailing around the world and were getting 15 knot average speed on long passages.
The way to go I reckon. Nothing beats waterline length.
