Kiting in Coral Bay is
very tide dependant (shallow coral), there is not much beach to launch on, heaps of people in and out of the water and lots of boat traffic although that may have changed with the building of the boat ramp further south.
Kiting is still possible but it is mostly flat water as the waves are about 1.5kms out breaking on shallow, sometimes exposed, coral. Not very friendly when you are on your own. The big bay just South of Paradise Beach looks good but with limited access. 4WD at the very least.
My suggestion would be Exmouth as it has the best combination of flat water and waves and a BIG range of accomodation options. The snorkling is way better and there's more sea life including dugongs, turtles and humpback whales. The downside is you have to drive some distance (can be upto 60-70kms) to various beaches/bays.
Can't beat a holiday in your own backyard...
