Instability is also influenced by ML shape. Pintails have greater tendency to roll. Check the shapes with more area - diamond, square, etc.

I'm 90 kg and picked up a used a 95 L Sunova Carver. It's plenty stable for a 6'2" x 20" narrow profile. The nose area has enough width/volume to keep it from sinking when getting to your feet. This has helped for learning in lite winds.

Was surprised by the grunt of a 5.5m Frigate. It yanked my 90kgs off the water in 12-15 knots. Using a 95 L Sunova Carver (6'2"x20") picked up used. Felt over powered and had to lean hard on the foil hard. But it was really fun riding one handed. Let's see how session 2 goes, with HA 980 foil.

I'm 90 kgs and use the 85 L version for winging in lite winds. It works when the wind is averaging 12 knots. When less than this, I prefer more volume such as a 95L Carver. I try to avoid wasting time and taking too long getting the board out from under the water and plaining, and missing the gust. It's a fun board given the thickness is minimized, and gives a direct feel to the foil. But the take off energy and speed needed is slightly higher. For 10 knots, a longer downwind shape will be significantly faster due to less drag.
